Boil the eggs in plenty of boiling water for 8 minutes. Let them scare under cold running water and peel them.

Carefully cut the eggs in half lengthwise. Remove the egg yolks from the egg white with the tip of a knife.

Finely chop the chives. Mix with a fork the egg yolks, mayonnaise, crème fraîche, chives, mustard and tabasco in a bowl to a smooth paste.

Add pepper and salt to taste. Put the mixture in the piping bag and fill in half the proteins. Sprinkle with paprika.
