Preheat the oven to 180ºC.

Cook the rice. Fold 4 packages of baking paper or aluminum foil.

Clean the pak choi and place a piece of pak choi in each package. Divide the fish, ginger and red pepper over it.

Pour the soy sauce and vinegar over it and fold the packages closed. Steam the packets in the oven for 15-20 minutes.

Open the packages and garnish with a lime wedge. Sprinkle the rice with the spring onions and serve with the fish packages.
