Directions

  1. Mix the yeast, flour and salt in a bowl. Make a well in the middle and pour in the lukewarm water. Knead until a smooth dough.
  2. Cover the bowl with a damp, clean tea towel and let the dough rise for 1 hour.
  3. Preheat the oven to 250 ° C.
  4. Cut the bacon into strips that are as thin as possible. Use a rolling pin to roll out the dough onto a baking tray covered with parchment paper to a thickness of 1 cm.
  5. Mix the crème fraîche with the cottage cheese and season with the nutmeg, pepper and salt. Divide this mixture over the dough.
  6. Cut the onion into rings. Cover the dough evenly with the bacon and onion.
  7. Fry the flammkuchen for about 15 minutes in the middle of the oven.
