Directions

  1. Sift the flour over a bowl (keep 1 tbsp). Make a well in the middle and pour the oil and water together with a pinch of salt. Knead the mixture into smooth dough.
  2. Knead the mixture into a smooth dough. Divide the dough into four equal balls. Cover the balls with a damp tea towel and let sit for about 20 minutes.
  3. Meanwhile, finely chop the parsley and spinach. Peel and chop the onion and garlic. Heat the oil in a large pan and gently fry the onion and garlic. Add the spinach, parsley, nutmeg and chili powder and mix well.
  4. Mix in the flour and add the milk. Keep stirring until a bound sauce is formed. Mix the cheese through the spinach and season with salt and pepper.
  5. Dust the work surface and the rolling pin with flour. Roll out the dough balls to thin of about 15 cm. average. Brush the frying pan with non-stick coating thinly with oil and heat. Bake 1 dough piece until it looks brown speckled.
  6. Brush the top of the dough thinly with oil and turn the bread over. Divide 1/4 of the spinach filling evenly over the baked side of the bread. Remove from the pan as soon as the bottom of the bread is baked.
  7. Roll up and wrap in a piece of baking paper. Prepare the rest of the rolls in the same way. Serve warm.
