Directions

  1. Beat the egg yolks with freshly ground pepper and paprika powder. Beat the chives and half of the cheese through them.
  2. Beat the egg whites in a clean bowl with a pinch of salt. Spoon the proteins gently through the cheese mixture.
  3. Heat the butter in a large frying pan with non-stick coating. Pour in the cheese mixture and leave with a lid on the pan for about 8 minutes at a low setting.
  4. Sprinkle with the rest of the cheese and fold the omelet carefully double. Leave the omelette in the pan for 1 minute so that the cheese melts well.
  5. Let the omelet slide on a plate and cut into pieces.
