Foam omelette with shrimps and chives

Roast the bread. Beat the egg yolks and stir in the shrimps, half of the chives, lemon zest and juice.

Beat the egg whites in a clean bowl with a pinch of salt. Spat the proteins carefully through the shrimp mixture.

Heat the butter in a large frying pan. Pour in the egg mixture and leave in a low setting for about 8 minutes.

Place the omelette on a plate, sprinkle with the rest of the chives and serve with the bread.
