Directions

  1. Roast the bread. Beat the egg yolks and stir in the shrimps, half of the chives, lemon zest and juice.
  2. Beat the egg whites in a clean bowl with a pinch of salt. Spat the proteins carefully through the shrimp mixture.
  3. Heat the butter in a large frying pan. Pour in the egg mixture and leave in a low setting for about 8 minutes.
  4. Place the omelette on a plate, sprinkle with the rest of the chives and serve with the bread.
