Heat the oil in a soup pan and fry the bacon cubes.

Add the onion, bay, thyme, tomatoes, lentils and stock and simmer for about 15 minutes. Season with salt and pepper.

Let the spinach shrink in the hot soup. Serve the soup with a large spoonful of yoghurt and sprinkle with the parsley.
