French toast with goat's cheese and syrup sauce

Mix the eggs with the vanilla sugar, the caster sugar and the milk. Soak the slices of bread in this mixture.

Fry the shallots in 25 grams of butter. Add half of the lemon juice and the apple cubes and simmer for about 10 minutes.

Meanwhile, bake the French toast in the rest of the butter.

Heat the syrup for the sauce with the rest of the lemon juice and add a small splash of water.

Slice the French toast diagonally and place on plates with the cheese and mashed potatoes in between. Pour the syrup sauce over it.
