Fresh tomato sauce (basic recipe)

Heat the olive oil in a pan with a thick bottom.

Add the onion and garlic and cook on soft heat for four minutes until they become softer and smell nice.

Take care that they do not turn brown.

In the meantime, cut the tomatoes into pieces and add them to the onion mixture with the herbs.

Bake for two minutes and stir regularly.

Then put the lid on the pan and let the tomatoes simmer gently in a quarter of an hour until they are soft and release their moisture.

Put the hand blender into the pan and puree everything into a nice smooth sauce.

Let it boil for a maximum of ten minutes if necessary until the thickness is good.

When the sauce is very sour, add a teaspoon of sugar.
