Cut the fresh mint fine and leave some for garnishing. Halve the cucumber in the length and remove the seed lists with a teaspoon.

Grate the flesh coarse and put it in a sieve. Push out as much moisture as possible with a spoon.

Clean the lemon. Grate the yellow skin of the lemon and squeeze out the fruit. Press the garlic.

Cut the peppers into small pieces. Mix the yogurt with the cucumber, lemon zest, garlic, fresh mint and paprika.

Season with the lemon juice, oil and pepper and salt. Sprinkle with the trapped coin.
