Heat the vinegar with the red pepper, garlic, lime zest, sugar, cumin, cardamom and cinnamon in a thick-bottomed pan.

Add the mango cubes and boil for about 20 minutes with occasional stirring or until the chutney has thickened.

Spoon the chutney in fireproof pots. Close them and allow them to cool down in reverse.

Delicious with meat, chicken and fish.
