Directions

  1. Scrape long ribbons from a mix of vegetables such as carrot, cucumber, zucchini and radish. Cut the bunch of forest onion 4 times in length.
  2. If necessary, also slice the apple and beet into slices and cut into strips.
  3. Mix all the vegetables in a large bowl and spoon the chopped chives, bunches of spring onions and a dressing of white wine vinegar, olive oil and a little mustard just before serving.
