Fried cod on yellow curry rice

Directions

  1. Preheat the oven to 200 ° C.
  2. Chop the onion.
  3. Heat one third of the oil in a pan and fry the onion and curry powder for 1-2 minutes until it smells nice.
  4. Stir in the rice and cook until the grains shine.
  5. Pour in the stock and cook the rice gently for 15-20 minutes.
  6. Rub the pieces of cod with salt, pepper and lemon juice and leave to soak.
  7. Roast the almonds in a dry frying pan golden brown and let them cool down on a plate.
  8. Put tomatoes in a roasting pan, sprinkle with salt and pepper and drizzle with oil.
  9. Roast the tomatoes for 8-10 minutes in the oven until the skins open.
  10. Roll the cod pieces through the flour and fry them in a frying pan with oil left in 6-8 minutes until nicely browned and just done.
  11. Turn them back after 3-4 minutes.
  12. Serve the rice with the cod on it.
  13. Sprinkle the almonds and lay the tomatoes next to it.
  14. Menu suggestion For: tomato salad with vinaigrette and finely chopped onion and chives.
  15. After: rusk with strawberries.
