Fried cod on yellow curry rice

Preheat the oven to 200 ° C.

Chop the onion.

Heat one third of the oil in a pan and fry the onion and curry powder for 1-2 minutes until it smells nice.

Stir in the rice and cook until the grains shine.

Pour in the stock and cook the rice gently for 15-20 minutes.

Rub the pieces of cod with salt, pepper and lemon juice and leave to soak.

Roast the almonds in a dry frying pan golden brown and let them cool down on a plate.

Put tomatoes in a roasting pan, sprinkle with salt and pepper and drizzle with oil.

Roast the tomatoes for 8-10 minutes in the oven until the skins open.

Roll the cod pieces through the flour and fry them in a frying pan with oil left in 6-8 minutes until nicely browned and just done.

Turn them back after 3-4 minutes.

Serve the rice with the cod on it.
