Vegetarian rice salad with mozzarella
Vegetarian nut rice salad with snow peas, garden peas, basil, red onion and mozzarella.

Boil the rice according to the instructions on the package. Clean the snow peas. Boil the snow peas in 2 minutes and cook them with cold water.

Put the garden peas in a sieve and play under lukewarm water until thawed. This keeps the peas fresh green in color and crisp.

Slice the onion and cut the mozzarella into cubes. Grate the yellow skin of the lemon and squeeze out the fruit.

Beat a dressing of the lemon juice, grater and oil. Tear the leaves of the basil.

Mix in the basil and season with (freshly ground) pepper and salt. Spoon the basil dressing through the rice.

Spoon the garden peas, snow peas, onion and mozzarella through the rice. Serve the rice lukewarm or let it cool down, so that the flavors can better withdraw.
