Check the mussels for damaged and open specimens. Boil them with beer in 2-3 minutes until all the shells are open. Remove them from the pan and let them cool slightly.

Clean the leek and cut it into narrow rings.

Carefully remove the mussels from the shells and, if necessary, pat them a little dry with kitchen paper.

Fry the bacon cubes crispy in a wok or skillet.

Add olive oil and leek and cook for 2 minutes. Stir in the mussels and gently bake them for 1 minute. Add plenty of pepper.
