Fried pangafilet with anchovy butter

Mix all ingredients for the anchovy butter together. Season with a little salt and freshly ground black pepper. Form a roll of the anchovy butter in cling film and allow the butter to harden in the refrigerator.

Dab the pancake fillets well with kitchen paper. Season the fillets with salt and freshly ground pepper and swirl them lightly through the flour.

Heat the oil in a frying pan and fry the fillets in a high setting for about 2 minutes. Turn the fillets over and bake for about 2 minutes again. Place the fried fillets on a dish.

Cut the anchovy butter into slices. Place a slice of butter on the fried pan fillets and serve immediately.
