Directions

  1. Sprinkle the meat with the pepper. Heat the butter and brown the meat around it.
  2. Add the shallots and fry for 2 minutes.
  3. Sprinkle salt over the meat. Pour in the red wine and roast the roast beef for 25 minutes with the lid on the pan. Turn the meat occasionally.
  4. Remove the meat from the pan, wrap it in aluminum foil and let it rest for 10 minutes.
  5. In the meantime, bring the cooking liquid to the boil, stir in mustard and cooking cream and let the sauce reduce a little.
  6. Cut the roast beef into slices, add the meat juice to the sauce. Place the meat on a warm dish, pour a little sauce over it and add boiled potatoes and red cabbage or sauerkraut.
