Grate the zucchini with a grater or in a food processor. Cut the olives fine.

Beat the egg and put it together with the flour, grated zucchini, black olives, pepper and half of the grated cheese in a bowl. Mix well.

Put the sunflower oil in a frying pan. Spoon a large spoonful of the mixture into the pan and bake the cookies as a small pancake.

Remove the zucchini cookies from the pan, place dots of the remaining cheese grater in the pan (larger than the biscuit) and place the biscuits on top. In this way an extra layer of cheese is created which protrudes.
