Garlic lemon for fish, chicken or vegetables

Finely chop the garlic. Grate the yellow skin of the lemon and squeeze out the lemon. Heat a fourth of the olive oil in a saucepan and stir in the garlic.

Fry the garlic very gently in 2-3 minutes, do not let the garlic brown. Stir in the cumin and coriander and fry for 1 more minute until it smells nice.

Put this mixture in the mortar or food processor. Add lemon zest and thyme and rub everything with the pestle into a thin mash. Grind generously black pepper and add 1-2 tablespoons of lemon juice and the rest of the olive oil. Mix everything with the pestle to a nice rub.
