Directions

  1. Finely chop the garlic and the red pepper. Grate the ginger and cut the coriander roughly.
  2. Heat 2 tablespoons of oil in a saucepan and fry the garlic with ginger and red pepper until it smells nice. Add the curry powder and fruit for another minute.
  3. Put this mixture in the food processor. Add lime juice, coriander and the rest of the oil. Mix everything into a fine rub.
