Bring the wine and port to a boil in a thick-bottomed pan.

Stir the garlic and cheese in portions through the wine. Add the next portion of cheese only when the previous one has melted completely. Season with freshly ground pepper and some lemon juice.

Dissolve the cornstarch in a few tablespoons of port or water and stir in the cheese fondue. Cook gently for 2-3 minutes.

Put the cheese fondue on a hot plate on the table and serve with bread, pieces of apple and nuts for baptism.
