Grandma's apple pie


Classic apple pie with apple, raisins, biscuit and speculaas spices.

Directions

  1. Cut the butter into cubes. Split the eggs (protein is not used).
  2. In the food processor, mix the flour, caster sugar, butter, half of the egg yolk and the salt with the cold water into a firm dough.
  3. Form the dough into a thick sausage, wrap it tightly in plastic wrap and leave it in the refrigerator for at least 30 minutes.
  4. Preheat the oven to 175 ºC.
  5. Peel the apples, cut into quarters and remove the core. Cut the quarters into slices.
  6. Spoon the apple slices in a bowl with the semolina, the biscuits, raisins and caster sugar.
  7. Dust the work surface with flour. Roll out ⅔ of the dough into a piece of approx. 26 cm diameter. Grease the mold and cover with the dough.
  8. Remove the crust from the bread and cut into cubes. Mix the bread with the semolina and sprinkle over the bottom.
  9. Put the apple mixture in the spring form. Roll out the remaining dough and cut into strips. Place the bars in a braid shape on the apple filling.
  10. Brush the edge of the cake and the handles with the rest of the egg yolks.
  11. Fry the cake in the middle of the oven in about 1 hour and 15 minutes until golden brown and done.
