Gratin of sweet potato and sprouts with goat's cheese

Preheat the oven to 200ºC.

Halve the sweet potatoes in length and cut into thin slices. Also cut the sprouts into thin slices. Blanch the sprouts for 1 minute in boiling water, drain and spread over the oven dish.

Divide half of the goat cheese over it. Blanch the potato slices for 1 minute, drain and place on top of the sprouts.

Beat the cream with the egg, thyme and pepper and pour over the potato slices. Divide the rest of the cheese and the walnuts over it.

Bake the dish in the middle of the oven for about 20 minutes.
