Greek yogurt with apple compote
Yogurt with a compote of fresh sweet apple, ginger, cinnamon and coconut palm sugar with apricots

Peel the apples, cut into quarters and remove the core. Cut the flesh into cubes of 1 x 1 cm (brunoise).

Peel and grate the ginger. Mix the apple, ginger and cinnamon with the coconut palm sugar.

Melt the butter in a thick-bottomed pan and simmer the apple mixture for 10-15 minutes on low heat with the lid on the pan. Stir frequently.

Meanwhile, divide the yogurt over 4 glasses or bowls.

Halve the apricots. Mix the rest of the sugar with the water and fry with apricots for 4 min. On medium heat until lightly caramelised. Change regularly.

Spoon the mashed potatoes over the yogurt and divide the apricots. Serve immediately.
