Green herb salad
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: oranges, balsamic vinegar, extra virgin olive oil with basil, watercress (75 g), lamb's lettuce (75 g), fresh basil (a 15 g), fresh mint (15 g), fresh parsley (flat ( 20 g)), fresh chives (20 g), arugula (lettuce and 75 g).

Clean 1 orange and grate the peel.

Press out both oranges.

Bring the juice together with the grater to the boil and boil the liquid over high heat until a third is left.

Let this boiled water cool and then beat it with the vinegar and olive oil to a dressing.

Add salt and pepper to taste.

Transfer the dressing into a nice jug or dish.

Remove the coarse twigs from the watercress and possibly the carrots from the lamb's lettuce.

Pick the leaves of basil, fresh mint and parsley sprigs.

Cut the chives into 2 cm pieces.

Spoon the watercress, lamb's lettuce, rocket, basil, mint, parsley and chives into a large salad bowl.

Serve the dressing separately..
