Heat the oil and fry the hamstrings crispy. Take them out of the pan and drain on kitchen paper.

Fry the onion in the remaining shortening for about 5 minutes.

Add the peas and stock and cook for about 5 minutes. The peas must be soft but still fresh green.

Take 2 large spoons from the soup, add half of the chervil and puree. Return the pureed soup to the pan and stir in the crème fraîche.

Season with salt and freshly ground pepper. Sprinkle with the crispy ham and the rest of the chervil.
