Green sauce from piedmont
A tasty Italian recipe. The side dish contains the following ingredients: fish, egg, white bread, milk, anchovy fillets, fresh parsley, garlic, capers and olive oil.

Boil in approx.

10 minutes, rinse under cold water, peel and halve.

Remove egg yolk, white is not used.

Cut crusts of bread and soak bread in milk.

Cut out breadcrumbs.

Anchovy fillets drain on kitchen paper.

Parsley from stalks and chop mince.
-
Peel garlic and cut into quarters.
-
Anchovy with egg yolk coarse chop and put into mortar.

Add parsley, garlic, capers and bread crumbs and rub into smooth paste.

Add little by little olive oil while beating.

Serve sauce with (cooked) fish or meat dishes..
