Vegan curry of zucchini

Directions

  1. Cut the zucchini into 3 cm pieces. Heat the oil in a frying pan and cook over a high heat for 4 min. Brown. Take out of the pan and keep separate.
  2. Chop the onion. Heat the oil in the pan and fry the onion over medium heat 5 min.
  3. Peel the ginger. Slice the ginger and garlic. Add the ginger and the garlic to the onion, the cinnamon stick and cumin seeds and bake for another 3 minutes.
  4. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the red pepper finely.
  5. Cut the tomato into pieces. Add the pepper with the tomato to the onion spice mixture and cook for 15 minutes on low heat.
  6. Cut the coriander coarsely. Put the zucchini back in the pan and fry for another 3 minutes. Season with salt and pepper and sprinkle with the coriander.
