Directions

  1. Cut the carrot into thin slices.
  2. Cut the green and white of the bok choy into wide strips.
  3. Heat the oil in a stir-fry stir-fry the shrimp with the curry paste until the shrimps have thawed.
  4. Add the carrots and white packs and stir-fry for another two minutes.
  5. Scoop the green strips of pak choi through them.
  6. Pour in the water and let the curry simmer gently for five minutes.
  7. Season to taste with some salt and possibly also some curry paste.
  8. Serve the curry in wide bowls.
  9. Delicious with pandan rice.
