Green vegetable curry with fragrant rice

Boil the rice according to the instructions on the package. Slice the onion, the zucchini into slices and the leeks in coarse rings.

Heat the oil in a frying pan and fry the onion for 1 min. Sprinkle the curry powder over it and bake for 1 min.

Put the zucchini slices, leeks and green beans through and fry the vegetables for 2-3 minutes. Pour the coconut milk with the vegetables and bring it to the boil.

Let the vegetables with the lid tilted on the pan in 5-10 min. On low heat al dente. Season the vegetable curry with (cayenne) pepper and salt.

Put the rice in the bowls and spread the vegetable curry over it. Serve immediately.
