Green-vegetable soup with fresh herbs


Soup of zucchini, celery, basil, flat parsley and feta.

Directions

  1. Cut the zucchini into pieces. Heat the oil in a soup pan and fry the zucchini for 5 minutes on medium heat.
  2. Add the bag of herb mix from the packet of vegetable soup and the boiling water. Bring to the boil and cook for 15 minutes.
  3. In the meantime cut the celery into bows. Add the celery and cook for 5 minutes on low heat.
  4. Cut the basil and parsley coarsely. Add the fresh herbs to the soup and puree with the hand blender.
  5. Add the bag of vermicelli from the package of vegetable soup, bring to the boil again and cook for 5 minutes.
  6. Spoon the soup into the bowls and crumble the cheese over it.
