Directions

  1. Stir the ingredients for the marinade together. Place the meat in a bowl and rub the marinade over it.
  2. Let stand for at least an hour, the last half an hour outside the refrigerator.
  3. Mix all the ingredients for the orange butter with salt in the food processor (be careful with the turmeric because it quickly turns the butter yellow).
  4. Put the butter in a lockable container or roll it in a piece of foil and leave to set in the refrigerator.
  5. Heat a layer of sunflower oil in a high pan and fry the strips of ginger very quickly golden and crispy. Drain on kitchen paper.
  6. Heat the grill pan to high setting. Remove the meat from the marinade, sprinkle it with some coarse salt and scald it and brown in about 2 minutes per side.
  7. Serve the meat (possibly pre-cut) on pre-heated plates with a piece of butter and a pinch of fried ginger.
