Directions

  1. Preheat the oven to 225ºC.
  2. Halve the lime, press out one half and slice the other half into slices.
  3. Mix the lime juice with the ginger, soy sauce, honey and sesame oil. Brush the chicken completely, including under the skin and on the inside. Some marinade remains.
  4. Put the lime slices in the cavity of the chicken. Place the chicken on the breast side and put in the middle of the oven. Lower the oven temperature to 175ºC.
  5. Turn the chicken over after about 30 minutes and brush with the remaining marinade. Then roast the chicken for another 30 minutes in the oven. Baste from time to time with some frying fat to prevent dehydration.
  6. Remove the chicken from the oven and sprinkle with the sesame seed. Cover with aluminum foil and let rest for about 10 minutes. Tasty with stir-fried vegetables and rice or noodles.
