Grilled eggplant rolls


Bite of rolls of grilled eggplant with chipolata sausages, grilled peppers and hummus.

Directions

  1. Cut the aubergine lengthwise into 10 slices. Brush both sides of the slices with the oil and sprinkle with pepper and salt.
  2. Heat the grill pan without oil or butter and grill the eggplant slices for 6 minutes. Turn halfway.
  3. Make 2 smaller sausages from each sausage by turning the sheet in the opposite direction halfway. Cut through.
  4. Heat a frying pan with non-stick coating without oil or butter and fry the sausages in 8 min.
  5. Meanwhile let the peppers drain and pat dry. Cut the flesh lengthwise into 10 strips.
  6. Place 1 bar of pepper and 1 sausage and roll on each eggplant slice. Serve with the hummus.
