Grilled pineapple with maple syrup
Warm pineapple with ginger, lime, maple syrup and coconut coconut.

Peel and grate the ginger. Grate the green skin of the lime and squeeze out the fruit.

Put the ginger and the lime juice with the maple syrup in a saucepan and bring to the boil. Cook gently for 2 minutes. Remove the pan from the heat.

Peel the pineapple and cut in quarters lengthwise. Remove the hard core and cut the pineapple pieces in half lengthwise.

Heat the grill pan without oil or butter and grill the pineapple for 4 minutes. Turn halfway. Add the warm syrup and turn off the heat.

Spoon the pineapple in a bowl and garnish with the lime zest and the coconut.
