Grilled salmon with spicy mango salad

Directions

  1. Mix the lime juice, 3 tablespoons of sunflower oil, honey, mustard, red pepper and coriander into a dressing with a hand blender. Season with salt and pepper.
  2. Divide the mango along with the lamb's lettuce over plates and divide 3/4 of the dressing over it.
  3. Heat a grill pan at medium height, brush the salmon fillets with the rest of the oil and grill in about 5 minutes around golden brown and done.
  4. Sprinkle the salmon with the rest of the dressing and serve with the spicy mango salad.
