Cut the tomatoes into quarters, remove the seeds and cut the flesh into cubes of ½ x ½ cm (brunoise).

Cut the coriander finely and chop the onion.

Cut the avocados half way through. Remove the kernel and make a diamond pattern in the flesh. Scoop the flesh from the peel and prick into a coarse puree.

Mix the tomato, coriander, onion, cumin and lime juice with the avocado puree and season with salt.
