Directions

  1. Preheat the oven to 180 ° C. Grate the yellow skin of the lemon. Stir in the ricotta with the grater, breadcrumbs, garlic, half of the basil, pepper and salt.
  2. Remove the net from the roulade and cut the meat through, but leave the halves together. Sprinkle the inside with salt and pepper and divide half of the ricotta mixture. Push the halves together and tie the meat with kitchen rope. Sprinkle with salt and pepper and brush with the rest of the ricotta mixture.
  3. Put the oil in the frying pan and put the roulade in it. Put the pan without lid in the middle of the oven and bake the meat for about 40 minutes. Baste halfway with the shortening.
  4. Allow the roulade to rest for 10 minutes with the lid on the pan. Remove the rope and cut into slices. Cut the grated lemon into pieces. Serve the roulade with the lemon and the rest of the basil.
