Hare Pepper
A tasty Dutch recipe. The main course contains the following ingredients: meat, onion, garlic, celery, hare back bolts, salt, freshly ground pepper, butter or margarine, bacon strips, red wine, wildfires (380 ml AH), thyme, bay leaves and cloves.

Slice onion and garlic and finely chop.

Wash celery, clean and cut into small pieces.

Spread the hare with salt and pepper.

Heat butter in a frying pan.

Bake bacon gently for 3 minutes.

Create on a plate with a skimmer.

Bake hare around brown in baking fat.

Place with skimmer next to bacon.

Bake softly about 3 minutes in shortening onion and celery.

Add wine and fond and bring to the boil.

Place pieces of hare in it.

Add bacon, thyme, bay leaf and cloves.

With the lid tilted gently on the pan of hare in approx.

2 hours.

Place the hare in a bowl with a skimmer and keep warm.

Reduce the heat on a high heat to a thin sauce.

Sauce over hare.

Serve with mashed potatoes and red cabbage..
