Herb couscous with grilled asparagus


Couscous with broccoli rice, mint, chives, cashew nuts, lemon, honey, green asparagus and goat cheese.

Directions

  1. Put the couscous and broccoli rice in a bowl and pour over the boiling water. Stir through and leave for 10 minutes.
  2. Remove the leaves of fresh mint from the twigs and cut into strips. Slice the chives. Chop the cashew nuts coarsely. Squeeze out the lemon.
  3. Mix the lemon juice with the oil and honey into a dressing.
  4. Heat the grill pan. Remove the woody underside of the asparagus. Brush the asparagus with the rest of the oil and grill for 6 minutes. Regularly.
  5. Stir in the couscous and broccoli strips. Spoon the fresh mint and chives through and mix with the dressing.
  6. Put the asparagus on the spice couscous, crumble the goat's cheese and sprinkle with the cashew nuts.
