Directions

  1. Heat the oil in the soup pan and fry the potato and leek at low setting until they are a little colored.
  2. Add the stock and simmer for 10 minutes at medium heat.
  3. Check that the potato is well cooked. Then add the crème fraîche and the herbs (keep a separate slice for garnish) and then puree the soup with the hand blender.
  4. Season well with freshly ground pepper and garnish with the rest of the herbs.
