Herring salad with beetroot

Beat in a bowl a dressing of wine vinegar, mustard, oil, dill, some salt and freshly ground pepper.

Peel the beetroot and scrape them into wafer-thin slices with a cheese slicer.

In a deep plate, mix the slices of beet with half of the dressing and let it stand for five minutes.

Stir in the mayonnaise through the rest of the dressing.

Halve the herring lengthways and cut the halves diagonally into strips of a cm wide.

Spoon the herring strips through the mayonnaise dressing.

Place the slices of beet as carpaccio on plates.

Divide some lamb's lettuce in the middle and put the herring salad on the lamb's lettuce.

Garnish with onion rings and pickle.
