Directions

  1. Split the eggs, the protein is not used.
  2. Beat the yolks with the sugar, the vanilla flavor and the custard powder frothy.
  3. Bring the cream with the sugar and milk to the boil.
  4. Add a dash of this hot cream to the egg foam with stirring. Then pour this mixture into the pan while stirring with the cream mixture.
  5. Heat to a thick custard while stirring. Allow the custard to cool down to lukewarm, stirring frequently.
  6. Meanwhile, create the fruit spread by the summer fruit. Puree 150 g of this mixture with the hand blender and keep separate.
  7. Cut the cake into cubes, put in the bowl and drizzle with the sherry.
  8. Spoon the rest of the fruit puree onto the cake. Pour the custard over it and smooth.
  9. Put in the refrigerator for at least 2 hours.
  10. Roast the almonds in 3 min. Until golden brown in a frying pan without oil or butter.
  11. Beat the rest of the whipped cream with the rest of the sugar just before serving.
  12. Divide the retained fruit puree over the custard, scoop up the whipped cream and sprinkle with the almond shavings.
