Herring with red beet pesto
A tasty recipe. The snack contains the following ingredients: fish, pine nuts (bag of 65 g), boiled beets ((shell 500 g), peeled), red onion (chopped), balsamic vinegar (bottle 250 ml), mayonnaise, Dutch New herring (3 pieces) and chives (a 25 g).

Roast the pine nuts in a frying pan without oil or butter in 3 min. Golden brown. Put them in the food processor. Add the beetroot, onion, vinegar and mayonnaise and puree until smooth. Season with salt and pepper.

Cut the pegs into pieces of 4 cm and lay on a scale. Cut the chives into pieces of approx. 4 cm. Put some pesto on each piece of herring. Garnish with chives.
