A tasty Dutch recipe. The lunch contains the following ingredients: fish, salty herring (2 pieces), shallot (finely chopped), grated beetroot (400 g), fresh chives (25 g), crème fraîche (200 ml) and caraway seed.

Cut the herring into very small pieces. Add the shallot and pepper and salt to the herring and scoop.

Place the rings on 4 plates, spread the herring over the cooking rings and press. Divide the beetroot over it and press. Keep 8 sprigs of chives apart and cut the rest fine. Mix the chives with the crème fraîche and spread over the 4 rings. Sprinkle with the caraway seed. Carefully remove the cooking rings. Cut the retained chives into small pieces. Garnish every tartlet with this. Tasty with rye bread.
