Melt the butter in a pan with a thick bottom and stir in the flour. Keep stirring until the mixture releases as a ball from the bottom of the pan.

Stir fry for a dash of the stock until it is a thick sauce. Season the sauce with lemon juice, nutmeg, salt and pepper. Warm the pieces of chicken in the sauce.

Stir the egg yolks with the cream and stir this mixture through the ragout.

Warm well, but make sure that the ragout does not cook anymore. Sprinkle with the parsley.
