Hot chicken with roasted pineapple and bean rice

Ingredients
- 8 chicken drumsticks
- 2 dried chili pepper for the marinade
- 2 clove garlic for the marinade
- Ginger root for the marinade
- Pinch nutmeg for the marinade
- 2 orange for the marinade
- 1 tablespoon honey for the marinade
- 1 tablespoon thyme for the marinade
- 1 tablespoon dried thyme for the marinade
- 2 tablespoon soy sauce for the marinade
- 3 tablespoon peanut oil for the marinade
- 3 tablespoon sunflower oil for the marinade
- 400 gram basmati rice for the bean rice
- 400 milliliters coconut milk for the bean rice
- 1 teaspoon chili powder for the bean rice
- 500 gram kidney bean for the bean rice
- 1 pineapple for the bean rice
- 2 tablespoon Brown sugar for the bean rice
Directions

Preheat the oven to 200ºC.

Put the chicken in the oven and bake for 35-40 minutes.

Turn the chicken drumsticks occasionally.

Meanwhile, cook the rice in coconut milk with chili powder.

Heat the beans, drain them and scoop them through the cooked rice.

Sprinkle the pineapple with the sugar and grill briefly under the hot grill.

Serve the chicken with the bean rice and pineapple.
