Directions

  1. Preheat the oven to 200ºC.
  2. Put the chicken in the oven and bake for 35-40 minutes.
  3. Turn the chicken drumsticks occasionally.
  4. Meanwhile, cook the rice in coconut milk with chili powder.
  5. Heat the beans, drain them and scoop them through the cooked rice.
  6. Sprinkle the pineapple with the sugar and grill briefly under the hot grill.
  7. Serve the chicken with the bean rice and pineapple.
