Hummus (also written as houmous or humus) is a vegetarian chickpea paste with paprika powder. A nice dip

Directions

  1. Squeeze out the lemon and finely chop the garlic.
  2. Keep 2 tbsp chickpeas apart. Mash the rest of the chickpeas with 5 tbsp water, the lemon juice, the tahini, garlic and salt with the hand blender until smooth.
  3. Spoon the hummus in a flat dish and smooth with the convex side of a spoon. Drizzle with the olive oil.
  4. Sprinkle the hummus with the chickpeas kept separate and the paprika.
