Hummus with spicy herb oil
Homemade hummus of chickpeas, tahini, parsley, mint, capers and red pepper.

Put the chickpeas in a sieve, rinse and drain. Put together with the tahini and garlic in the bowl of the food processor and puree briefly.

Add the lemon juice and add the oil in a thin stream while the machine is running.

Put the rest of the oil with the parsley, mint leaves and capers, including liquid in a high cup.

Puree with the hand blender until smooth oil.
