Hummus with spicy herb oil


Homemade hummus of chickpeas, tahini, parsley, mint, capers and red pepper.

Directions

  1. Put the chickpeas in a sieve, rinse and drain. Put together with the tahini and garlic in the bowl of the food processor and puree briefly.
  2. Add the lemon juice and add the oil in a thin stream while the machine is running.
  3. Put the rest of the oil with the parsley, mint leaves and capers, including liquid in a high cup.
  4. Puree with the hand blender until smooth oil.
  5. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife.
  6. Cut the flesh fines and mix with the herb oil. Put the hummus in a bowl and drizzle with the pepper spices oil.
