Icelandic potato waffles with smoked salmon and sour cream

Peel the potato into cubes.

Boil the potatoes in a pan with a large layer of boiling water with a little salt in 15 minutes.

Drain the potatoes, crush them and stir them with the butter and milk to a smooth puree.

Stir in the egg and add salt, pepper and some nutmeg to taste.

Spoon 1-2 tablespoons of the puree into each waffle shape and fry the waffles in 8-10 minutes until crispy brown.

Spread the arugula or lamb's lettuce on small plates and put the potato waffles in the middle.

Drape the slices of salmon on the waffle and put a large spoonful of sour cream on it.

Sprinkle the finely chopped dill over it.
